Chocolate Yogurt Parfaits with Raspberries

Easy chocolate raspberry parfaits made with Greek yogurt are a healthy dessert or snack for any occasion. They're sweetened with maple syrup, and there's no cooking involved!

Ingredients
  

  • cups plain Greek yogurt
  • 3 Tbsp unsweetened cocoa powder
  • 3 Tbsp pure maple syrup
  • ¾ tsp vanilla extract
  • 6 oz raspberries (washed and patted dry)

For topping

  • whipped cream (optional)
  • chocolate, shaved (optional)

Instructions
 

  • In a medium bowl, mix the Greek yogurt with cocoa powder, maple syrup, and vanilla extract until smooth. (Use a fork or whisk first, then a spatula to make sure it’s mixed well.)
  • Spoon equal amounts* of the chocolate yogurt mixture into your parfait glasses. Add a layer of raspberries on top.
  • Continue layering until you have at least one additional layer of each type, depending on the size of your parfaits glasses.
  • Cover the glasses tightly with plastic wrap or foil. Chill in the refrigerator for at least 20 minutes, or until ready to serve.
  • Add desired toppings and enjoy!

Notes

*This recipe yields about 1.5 cups of chocolate yogurt mixture. You'll probably want to use around 1/4 cup - 1/3 cup of the mixture per parfait layer, depending on the size of your parfait glasses and how many layers you'll need.
Storage Tips: Store the covered parfaits in the refrigerator for up to 2 days. Add toppings before serving. The chocolate yogurt mixture on its own can be prepped up to 3 days ahead of time. Keep it stored in the fridge in an airtight container.
