Easy S'mores Truffles (4 Ingredients)

You only need 4 ingredients and 15 minutes of active prep time for these easy s'mores truffles, with stovetop melted marshmallows, graham cracker crumble and chocolate coating!

Ingredients
  

  • 4 sheets graham crackers
  • 1 Tbsp butter
  • 1 cup mini marshmallows (or large marshmallows, cut into pieces)
  • 1/2 cup chocolate chips (or chopped chocolate bar)

Instructions
 

  • Finely crush graham crackers (either in a ziploc bag with a rolling pin, or in a food processor). Set aside.
  • Melt butter** over low heat in a small pot or saucepan. Add marshmallows and cook, stirring, until mostly smooth. Remove from heat.
  • Pour in graham crackers and stir until the mixture is mostly uniform.
  • Using your hands, form a small amount of the mixture into a ball about 3/4-1 inch thick. Then roll in your palms to make it smooth. Place on a sheet pan lined with parchment or wax paper. Repeat with the remaining mixture.
  • Separately, in a microwave-safe bowl, melt chocolate chips in the microwave for 30 second intervals at 50% power. Stir between each interval, until smooth.*
  • Roll the graham cracker balls in the melted chocolate with a fork until fully coated. Using the fork, place each truffle back on the wax or parchment paper-coated sheet pan.
  • Working quickly before the chocolate sets, decorate the truffles with desired toppings.***
  • Refrigerate the truffles for 20-30 minutes until chocolate is set, then enjoy!****

Notes

*I recommend using a glass bowl, as it helps melt the chocolate chips more evenly.
**You can replace the butter with coconut oil if desired.
***I added a mini marshmallow (cut in half) to the top of each truffle, then sprinkled with graham cracker crumbs. See the post above for more topping ideas!
****If you want, you can eat these without chilling - just keep in mind, they'll be messy (like a true s'more)! 
Storage Tips: After the initial chilling period, store truffles in the refrigerator in an airtight container if not eating right away. Use layers of wax or parchment paper to prevent sticking. S'mores truffles should last for at least a week in the fridge, but are best eaten within 2-3 days for the best texture.
Serving Tips: These truffles are best served at room temperature. When ready to eat, take them out of the refrigerator for about 30 minutes (if possible) to allow chocolate to soften a bit, then serve.
