Strawberry Oreo Cheesecake Cups

These no bake strawberry oreo cheesecake cups are easy to make, with dreamy layers (and no electric mixer needed)! Greek yogurt and cream cheese come together for a delicious tangy flavor.

Ingredients
  

For the Cheesecake Mixture:

  • 8 oz cream cheese (softened*)
  • 1 cup plain Greek yogurt
  • 3 Tbsp maple syrup
  • 1 tsp vanilla extract

For the Oreo & Strawberry Layers:

  • 14 oreos (including the cream filling)
  • 8 oz strawberries (diced into small pieces)
  • whipped cream (optional, for topping)

Instructions
 

  • Set your cream cheese out on the counter about an hour before you start, so it softens/comes to room temperature.
  • Crush the Oreos in a zippable bag with a rolling pin (or in a food processor). Set aside.
  • In a bowl, combine cream cheese, Greek yogurt, vanilla extract, and maple syrup. Mix well with a fork, mashing the cream cheese as you go, until smooth. (You can use an electric mixer instead, if you prefer.)
  • Spoon (or pipe) a layer of cheesecake filling (about 1/4 cup) into the bottom of each parfait jar**. Sprinkle 2-3 tablespoons of crushed Oreos on top, then add a layer of 2-3 tablespoons of chopped strawberries. Continue until the jar is full. (I had 6 layers total in each jar, 2 of each type).
  • Pipe or spoon whipped cream on top, if desired. Serve immediately!

Notes

*How to soften cream cheese: Leave on the counter at room temperature for about an hour. For more even softening (and easier mixing), remove the cream cheese from the package and cut it into smaller cubes. Place in a covered bowl to soften on the counter. (For measurements: an 8oz package is equal to 1 cup.)
**For sizing/servings: I used ~8oz glasses (they fit a little over 1 cup of water inside). With that size cup, this recipe yields 4 parfaits.
Recipe Variations:
  • No cream cheese? Replace it with an equal amount of additional Greek yogurt. The cheesecake layer won't be quite as thick or tangy, but it will have a lighter consistency.
  • No Greek yogurt? You can replace it with whipped cream in the cheesecake filling. (If it has added sugar in it already, you may not want to use as much maple syrup). You may need to use an electric mixer in this case to properly mix the cheesecake filling.
  • No maple syrup? Replace it with powdered sugar, but you may need to use an electric mixer to mix the filling, since it will be thicker.
  • Feel free to swap out the strawberries for another type of berry, such as raspberries!
