Chocolate Cherry Popsicles with Yogurt
Chocolate chip cherry popsicles with Greek yogurt are the ultimate frozen summer snack! They're creamy, flavorful, and lightly sweetened with maple syrup.

- 2 cups plain Greek yogurt
- ½ tsp vanilla extract
- ¼ cup maple syrup, divided*
- 2 cups sweet cherries, divided (fresh or frozen**)
- ½ cup chocolate chips (dark or semisweet)
In a large bowl, mix together the Greek yogurt, vanilla extract, and 2 Tbsp of maple syrup.
In a separate bowl, remove stems and pits from cherries. Place 1 cup of the cherries and ¼ cup of the chocolate chips in a blender along with the rest of the maple syrup (2 Tbsp, or more as desired). Blend until pureed. Add the rest of the cherries and chocolate chips and pulse a few times, leaving some chunks of cherries and chocolate chips. (You can puree until smooth if you prefer popsicles without any chunks).
Pour the cherry chocolate mixture over the yogurt mixture. Stir gently a few times to swirl. Spoon the mixture into popsicle molds (or small paper cups).
Either use the popsicle covers that come with the popsicle mold, or cover the top of your popsicle mold with foil and insert popsicle sticks into the center of each popsicle. Freeze for at least 4 hours, or until fully frozen.
Lastly, remove popsicles from the popsicle mold. Add white chocolate drizzle and/or other toppings if desired***.
*For sweeter popsicles, add an additional 2 Tbsp of maple syrup to the Greek yogurt mixture.
**If using frozen cherries, thaw them overnight in the refrigerator and drain the liquid before using.
***For optional white chocolate drizzle: melt 1/2 cup of white chocolate chips with a tablespoon of unsalted butter or coconut oil in a microwave-safe bowl (preferably glass or porcelain) in 30-second intervals at 50% power, stirring between each interval, until smooth. Drizzle over frozen popsicles as desired.
Tip for removing popsicles from molds: If you're having trouble removing the popsicles from the silicone molds, run them under warm water for a few seconds first.
