Chocolate Rice Krispie Treats with Coconut

These chocolate Rice Krispie treats are super gooey and packed with cocoa flavor - with even more texture and flavor from shredded coconut! A quick and easy dessert recipe.

Ingredients
  

For the bars:

  • 3 Tbsp unsalted butter
  • 5 cups mini marshmallows*
  • ¼ cup unsweetened cocoa powder
  • 4 cups Rice Krispies cereal (plain/unflavored)
  • ½ cup unsweetened shredded coconut
  • pinch of salt

For topping:

  • cup chocolate chips, melted
  • ¼ cup unsweetened shredded coconut

Instructions
 

  • Line an 8x8in or 9x9in square baking dish with parchment paper (with overhang) OR spray well with cooking spray. Set aside. Spray a spatula/cooking utensil with cooking spray. (Measure out your ingredients ahead of time so you can work quickly once the marshmallows are melted).
  • In a large pot or saucepan, melt butter on low heat. Pour in marshmallows and cook, stirring with the greased spatula, until melted.
  • Add cocoa powder and a pinch of salt. Stir well to combine.
  • Add Rice Krispies cereal and shredded coconut to the mixture. Stir again until evenly incorporated. Remove from heat.
  • Pour the Rice Krispie mixture into your parchment-lined pan. Press down with the spatula to flatten it and fill out the pan.
  • Allow to cool for 20 minutes. Remove from the pan using the parchment paper overhang. Slice into bars with a large, sharp knife.
  • Leaving the bars together in the shape of the pan, add toppings** (melted chocolate drizzle and shredded coconut) if desired (see notes). Then, serve!

Notes

*5 cups of mini marshmallows equates to slightly less than a 10.5 oz bag. (There should be a little over 1 cup of mini marshmallows left over). If using large marshmallows, about 8 of those should equal 1 cup of mini marshmallows.
**For topping: Melt chocolate chips in a microwave safe bowl at 50% power in intervals of 30 seconds, stirring between each, until smooth. Allow to cool slightly, then spoon into a Ziploc bag. Cut off a very small piece of the corner and use it to drizzle chocolate over the Rice Krispie treats. Sprinkle shredded coconut over the melted chocolate.
Pro tip: Spray all the cooking utensils you use with nonstick cooking spray (or rub with an olive oil-soaked paper towel) to avoid sticking.
