Honey Strawberry Mascarpone Dip

This creamy strawberry mascarpone dip is sweetened with honey, and has a lovely hint of tangy Greek yogurt flavor. Serve with graham crackers or fruit!

Ingredients
  

  • ¾ cup mascarpone cheese, softened* (about 5 oz)
  • ½ cup plain Greek yogurt*
  • ¼ cup honey
  • 1 tsp vanilla extract
  • 8 oz strawberries

Instructions
 

  • Combine all ingredients except strawberries in a food processor. Puree until smooth.
  • Remove the leafy green stems from the strawberries, then add them to the food processor. Puree with the other ingredients until smooth.
  • Spoon the dip into a bowl and add an extra drizzle of honey if desired. Serve with graham crackers and/or fruit!

Notes

*To soften mascarpone cheese, set it out on the counter for 20-30 minutes before you're ready to make the dip.
*I highly recommend using full-fat Greek yogurt (around 5%) for the right consistency. (Low-fat yogurts will thin out the dip.)
If you want to make the dip sweeter, add 2 tablespoons of powdered sugar. (Too much honey will make the dip too thin.)
If you want your dip to be thicker, roughly chop the strawberries on their own first in the food processor. Place them in a bowl lined with a paper towel and drain excess liquid. Then, add the diced strawberries back to the food processor, along with the other ingredients, and purée until smooth and combined.
