Cherry Chocolate Custard Toast

This chocolate custard toast with yogurt combines a fudgy chocolate custard layer with crispy toast, topped with sweet cherries and sliced almonds.

Ingredients
  

  • 3 slices bread
  • 1 egg
  • 3 Tbsp greek yogurt
  • 2 tsp maple syrup (or honey)
  • ½ tsp almond extract (optional)
  • 1 Tbsp cocoa powder
  • 3 Tbsp chocolate chips
  • ¼ cup cherries
  • 3 Tbsp almonds (sliced or chopped)

Instructions
 

  • Preheat oven to 400°F (205°C). Line a sheet pan with parchment paper.
  • In a small bowl, whisk together egg, yogurt, maple syrup, and optional almond extract until smooth. Add cocoa powder and stir until combined. Set aside.
  • Place bread on the lined sheet pan. Using the back of a spoon, press down in the middle of each bread slice to create a well for the custard.
  • Pour or spoon custard mixture into the center of each slice of bread. Use a spoon to spread it out evenly. Sprinkle chocolate chips on top.
  • Bake for 8-12 minutes for thinner bread slices OR 12-16 minutes for thick slices, until custard is set. (The center shouldn't wobble if shaken.)
  • Top with cherries and sliced almonds. Let rest for 1-2 minutes, then enjoy!

Notes

The amount of toasts you’ll make (and your baking time) depends on how thick your bread is sliced.
If you're not adding chocolate chips, add 1 additional teaspoon of maple syrup.
If you're using vanilla yogurt or yogurt with sugar in it already, there's no need to add maple syrup. It should be sweet enough as long as you’re adding chocolate chips! If you’re not much of a sweet tooth anyway, you may want to leave out the sweetener altogether.
