Chai Custard Toast with Pecan Icing

Chai custard toast features a layer of creamy, chai-spiced yogurt custard baked into slices of bread, then drizzled with 2-ingredient icing and topped with chopped pecans.

Ingredients
  

Custard Toast

  • 3 slices of bread*
  • 1 egg
  • 3 Tbsp Greek yogurt (plain)
  • ½ tsp vanilla extract
  • 1 tsp maple syrup
  • ½ tsp homemade chai spice mix (see notes for how to make)
  • 2 Tbsp pecans (chopped)

Icing

  • 3 Tbsp powdered sugar
  • ½ tsp milk

Instructions
 

  • Prep custard: in a small bowl, combine yogurt, egg, maple syrup, vanilla extract, and chai spice mix**. Whisk until smooth. Set aside.
  • Place sliced bread on a sheet pan lined with parchment paper. Using the back of a spoon, press down in the center of the bread, making an indentation. Spoon an equal amount of custard onto each slice of bread (within the indentation).
  • Bake at 400ºF (or 205ºC) for 8-12 minutes for thinner bread slices OR 12-16 minutes for thick slices, until custard is set and toast is golden brown.
  • Meanwhile, make icing. Combine powdered sugar and milk in a small bowl and mix until smooth.
  • When toast is done baking, drizzle icing over each slice and top with chopped pecans. Enjoy!

Notes

*Any type of bread should work, but thicker-sliced bread is best. Brioche, challah, or french bread are all delicious options!
**How to Make Homemade Chai Spice Mix: Combine 1/2 tsp cinnamon, 1/4 tsp ground ginger, pinch of nutmeg, pinch of cloves, pinch of cardamom (optional), and pinch of allspice (optional) in a small bowl and stir. (No worries if you don't have all these spices - cinnamon is the only truly essential one for this recipe! Just use what you have). Save leftovers in an airtight container in the pantry for later use.
