Combine peanut butter, brown sugar & shredded coconut in a bowl.

Stir in maple syrup, egg & vanilla extract. Mix with a spatula until dough thickens.

Scoop dough & roll into balls. Press down with a fork to flatten with criss-cross pattern.

Bake cookies until set. Melt chocolate in microwave, then dip cookies in chocolate.

Sprinkle melted chocolate with shredded coconut. Chill in the fridge until set.
